Yummy Shrimp Pasta

No workout yet for Tuesday, but I wanted to post a pic for the yummy shrimp pasta dish I made for dinner!


It's made with a bit of diced onion, diced green pepper, diced roma tomatoes, sauteed up with some olive oil and fresh garlic. Of course- you adjust the amounts based on how many you're feeding and how strong you want any certain flavor. I love garlic, so I used 2 big cloves- and the amount I made, will go for 2 meals. But anyway- I start with the peeled and cleaned shrimp, and I put a little bit of spicy seasoning and garlic salt on them, into a baggie and let them "get happy-happy" (as Emeril would say) for the day.


Then when it's time to cook, I get the spaghetti going first. And while that is boiling, I cut up the veggies and start the sauteeing in a skillet (though I don't really use any heat higher than medium- so nothing burns). And then at the end (before the veggies are considered "done"), I add the shrimp. While that is cooking up, I drain the spaghetti. I put some into my serving dish, top it with a sprinkling of mozzerella cheese. (Of course- you can use whatever cheese you like, but a white kind sounds better than yellow like cheddar, in this particular dish.) I let the cheese get a little melty and I stir up the pasta. Then I top it with the shrimp, tomato & veggie mix. YUM!!!!


It's almost too pretty to eat, but it's too tasty to NOT eat!
