I haven't done today's workout yet, but wanted to post the pics of today's breakfast- a yummy Egg Taco!

I used 3 eggs (one whole egg, 2 egg whites), cooked it up in one pan (salt & pepper to taste). Then I also heated up one whole wheat tortilla (8-inch) so it was warm, added a bit of shredded cheese to the 'bottom'. I also cooked up a little bit of diced fresh green pepper and sliced mushrooms- just enough so they are not "raw" but not at all mushy yet- and added that to the sprinking of cheese on the tortilla. I put the egg on top, and then some sliced roma tomatoes on top of that. Folded it over and YUM-O!!!
I guess you could always cook up the peppers and mushrooms IN with the egg too- but I didn't do it that way because I didn't want the pepper/mushroom mix to be "overcooked". I like the peppers with still alot of crunch- but not wanting to add it to the taco as "cold and raw"...
I also ate the rest of the roma tomato as a "side dish" because there wasn't enough to save for later- but too much to throw out. Might as well eat it! Totally yummy breakfast- and filling, too!

You are so obviously a mom - that picture cracks me up with the healthy (& not exactly kid-friendly) breakfast on the BLUE'S CLUES plate! ROFL!
LOL!! I debated as to whether I should change the plate for the photo or not, but then thought (another very Mom-y thought)- why dirty up another plate?!?? ;-)
My "real" plates are too big (it's that whole gotta fill up the plate mentality- and I end up eating too much), but the smaller plates of the "real" plates- are too small for this tortilla. And the kids' plates are the right medium size! lol
I'd wondered if anyone would notice- and sure enough, YOU did! You MOM you!!! lol
